I woke up this morning really wanting banana muffins, and I actually had some really ripe bananas in my kitchen for once, so it was kind of perfect. I like these a lot because they’re not super sweet, and despite being vegan are very, very moist and crumbly like a good muffins should be. And bonus! They are full of fiber.
Banana Flaxseed Muffins
- 1 & 1/3 cup flour (all-purpose -or- whole wheat)
- 3/4 cup flaxseed meal
- 1/2 cup white sugar
- 1 Tsp baking powder
- 1 Tsp baking soda
- 1/2 Tsp salt
- 1/4 Tsp cinnamon
- 1/4 Tsp nutmeg
- 1/2 cup chopped nuts
- 2 very ripe bananas, mashed
- 1/3 cup vegetable oil
- 1 Tsp vanilla extract
- 2/3 cup milk (soy, rice, dairy) -or- water
Bake at 375 degrees 15-20 minutes; makes about 12.
