Pumpkin oatmeal cookies

Pumpkin oatmeal cookies. Sounds kinda healthy right? Don’t fool yourself, they’re so not healthy, but they do taste good. I made these for the first time for Christmas, and they were a huge hit. Even my sister who doesn’t like pumpkin loved these cookies.

Pumpkin Oatmeal Cookies:

  • 2 cups all purpose flour
  • 1 cup quick oats, dry
  • 1 cup light brown sugar, packed
  • 3/4 cup white sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 & 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1 cup butter
  • 1 cup canned pumpkin
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup raisins -or- dried cranberries
  • 1 cup chopped nuts

Put all ingredients except raisins and nuts in a large bowl and mix until smooth. Add raisins and nuts and mix until combined. Drop by the tablespoonful onto a greased cookie sheet and bake 12-15 minutes at 350 degrees.
